On an (egg) roll!

So, I decided to make egg rolls today. (By the way, I've been taking the lazy girl way out of making things lately...as you'll see.)

First, I took a bag of slaw mix (cabbage and carrots), some diced onion, and two packs of frozen salad shrimp, and sauteed it in a wok with about 2 tbs of hot sesame oil.

Then, I lined a plastic bowl with paper towels, tossed the filling in, and covered it with more paper towels. This was to absorb the moisture and make the filling more dry, so the egg rolls didn't come out exceedingly soggy and limp.

After the filling cooled, I got out my egg roll wrappers, and proceeded to wrap them up.

It was very simple...just four major folds, and I used some water and my finger to seal the dough up at the end.

I shallow pan fried one (since I don't own a deep fryer) and it came out pretty good. I did make a mental note that next time I need to add garlic (I ment to, but I forgot!).

Other than that, it's been a pretty lazy day around our home. My husband isn't feeling well (maybe something he ate?) and making these egg rolls has been the height of my productivity so far...

I did manage to go shopping today! First, is this top, and although their model is "pregnant" is actually a nursing hoodie. It looked too cozy and comfy to pass up...it looks like something I'll get a lot of wear out of. Second, I picked up this jacket in black...I'd been looking for a hooded raincoat type thing for a while, and this one managed to meet all of my stipulations (neutral color, belted waist, hood, pockets, weather resistant)...the fact that it came in petite sizes was a major bonus too!!

By the way, what did people do before internet retail?? I get to sit here on my exercise ball in my pajamas and spend money! There is absolutely no way I'd be able to actually go shopping...my sciatica is still being a pain in the rear (little pun there...har har).

Two Rants.

Today, since we had to drive to Fairmont for our Doctor's appointment, my husband and I decided to leave early and go to the Meadowbrook Mall in Clarksburg (which, is pretty common for us to do just to kill time).

They have a Motherhood store there, and I picked up a nursing bra, a nursing tank, and this t-shirt. Good thing I bought nursing covers 'cause all this nursing apparel about breaks the bank! I already have tons of $$ sunk into maternity clothes (mostly from Ann Taylor and Target of all places), and I dread sinking more money into special clothes to nurse in. I think I'm going to try to limit myself to a few nice semi-casual shirts and just live in a nightgown at home. I am also looking at Modest Middles as an option as well...any thoughts?

Rant One: Obviously, since I am already on the topic, I am okay with breastfeeding in public...but I am not okay with just floppin' one out there for the world to see. I'm uncomfortable with it, and other people are too! I don't really understand where some mother's get the idea of something like that being okay for public voyeurism. True, it's natural - but so is going to the bathroom, and we have things called stalls for a reason.

While walking around the Clarksburg Target, the doctor's office called me one hour before my appointment to reschedule - apparently the doctor had a family emergency. So, no baby doctor today...we're going to have to wait until Tuesday.

Since our plans got kind of shifted around, we pulled an NYC and stopped for dessert.

Rant Two: When you take someone's credit card, and run it for a bill, would you please look at who's it is? My husband's name is NOT Sarah, so do not hand him the bill nor the pen to sign with. Pay attention. I am in no way's a feminist revolutionary, but I find this should be common courtesy!! Just because he's the man doesn't mean he's paying! It's MY credit score.

Health Update on Myself: My PuPPPs is considerbly better; still a tad itchy, but much more under control. However, when I was getting into the car today, the baby decided to shift right on top of my sciatic nerve again...so, I'm back to having some pretty considerable back pain like my second trimester. Here's hoping he shifts off of it, but if not...I guess I only have a few more weeks of it left? There is an end in sight~!

The post title is what my husband said after finishing breakfast, which is, admittedly true.

Of course, it was due to the fact that I fixed sausage biscuits and gravy:




I don't fix it very often, and I was at least smart enough to cut the roll of sausage in half so I didn't over portion (and honestly, there was still too much for either of us to eat).

I did cheat, and use Pillsbury biscuits...you know, the ones that go "POP!" when you open them? Had the husband do that...it always about gives me a heart attack when I do it.

The recipe I use is a fairly simple one, and one slightly modified from my Grandmother's cooking.
Sausage Gravy and Biscuits
Yields: 3 Servings
1/2 Roll of Country Sausage
1/2 Can of Pillsbury Biscuits
Flour
Milk
Salt & Pepper

1. Pre-heat oven, and prep biscuits as package details.
2. Start biscuits.
3. In a frying pan, begin to break up and brown the country sausage on medium heat.
4. After sausage begins to brown, gradually add flour to coat sausage. Do not turn sausage too much, as you want the flour to coat the meat, brown, and get crispy.
5. When there are aproximately 5 minutes left on the timer until biscuits are done, add milk slowly, and turn heat under skillet to high.
6. Allow gravy to come to a boil, and then lower heat to warm.
7. Add salt & pepper to taste.
The only thing (I believe) I do differently from my Grandmother's tried and true recipe is that I brown the flour first. I find that by doing this, you eliminate lumps forming at all (although, she never had that problem, I consistently do?) plus, it makes the sausage "crunchy" which compliments bits of biscuit crumbled up well in the gravy.

Making sausage gravy always reminds me of spending time at my Grandparent's house...Ironically though, I used to detest this breakfast. My Grandmother (who spoiled me to no end) when fixing sausage gravy, would usually fix me a breakfast of bacon and eggs...Talk about hard work! Looking back on it, I have no idea how she had the patience to cook two separate breakfasts, watch my brother and I, and do all the dishes herself...

I have a lot to owe to my Grandmother. She taught me how to cook (country style), and attempted to teach me to sew (I'm just too lazy to do it). Granted, I can basically sew, but she makes beautiful hand sewn quilts with applique and all sorts of fancy embellishments. Very patient.

I wonder why I didn't get any patience? My grandmother, mother, and father OOZE patience. I'm such a "Let's do it NOW" spontaneous impromptu individual...

Baby doctor appointment today...just a check up...only 23 more days!!!

Back to being a Housewife...Day 1!

A long long time ago...I was a housewife. It subsequently made me reclusive and depressed. However, back then, I lived in a tiny one bedroom apartment, with only myself and the Internet to keep me company. My location was also more remote, and most of my friends were either working jobs or in classes and therefore too busy to go shopping on a random Tuesday afternoon. It also didn't help that I was in a very Fundamentalist Protestant denomination that basically said "women should stay at home, cook and clean, and keep their mouths shut", which, if you know me, is quite different from my very headstrong and (sometimes) dominating personality.

This time, I'm sure will be different. To begin with, I'm about a 15 minute walk from downtown, I now have a house, I have a wonderful dog to keep me company, and soon a baby boy to take care of. Additionally, I'll have purpose outside of my nuclear family in that my office is only a click or phone call away if I need to do some work...plus, if I just need to get out, my husband can come home and handle it.

My husband's job is a flexible one, and he's reiterated to me that should I need to just get out of the house, that he's just a phone call (or text message most likely) away. If I need to leave and take a breather, I can. Just knowing that my husband is that accommodating is such a relief to me. (It's interesting though, because if the tables were turned, he would LOVE to be a house husband and me be the working stiff...maybe someday...haha!)

Today was day one, which granted is a honeymooning period. I finally put the linens on the crib, did baby's first load of laundry, fixed dinner, and tied up a few loose ends on bills and things. All was good.

I think staying at home with my kids is what I would ideally like to do, but I also know (due to my personality) that I'm going to need another sense of drive and purpose outside of that. You know, one just for yourself.

This fall, along with the arrival of Xavier Thomas, I will be taking an Advertising course (online), plus I'll still have my graphic design job with my two different employers. I think this will keep me plenty occupied. I don't want to say "busy" because of course I will be busy with the baby...but I believe I'll want a purpose other than being a Stepford Wife.

Hm...this post is all over the place...let me try to sum it up:
  1. I think staying at home with your kids is excellent.
  2. I think having a job outside of your nuclear family can be important depending on your personality.
  3. I am in the beautiful situation that I'm going to be able to do both.
I feel very happy and content.

I'm SO excited!

Busy~

So, I went to work today, and explained that due to my PUPPP that I wouldn't be in much until considerably later...They understood and wished me well, but not before they let me know that a couple of our old dual core PCs died, and weren't running well on our server...so they formatted three of them, held a drawing (when I was NYC) and I won one!

It's a pretty sweet build...dual core 64x processor, 250GB, and has a graphics card that is set up to have dual monitors as well...only half as impressive as the current machine I work on at work (which is a quad core 64x), but the fact that I got this baby for free is awesome. I talked with a co-worker of mine, and he explained that the only thing wrong with it is that there was a minor BIOS setting that needed to be fixed (the hard drive was set up as RAID instead of IDE)...

I fixed fresh corn, fresh green beans, and some eye of round steaks for dinner tonight...I had forgotten my love for fresh vegetables! I put a corned beef brisket in a crock pop for dinner tomorrow...

Tomorrow I hope to get the sheets washed and put on the mattress in the crib, pack my hospital bag, and pack a diaper bag. It's really getting close I was realizing...haha~

Oh, and an update on the website I was building for NYC...turns out I surpassed the number of pages I could build (I was using a free site 'cause I'm lazy...)...so I said forget it, and I'm going to make a digital scrapbook PDF...I'll upload it when I'm done for download.

I'm so glad we went to New York when we did...I'm noticing that I'm so much more tired now (even just a week later)...I think we made the trip at the last possible moment!!

Itchy.

So, the doctor prescribed me Prednisone and Vistaril for my PUPPP. I think I can notice a slight difference in how fast it was spreading, but I'm still really itchy...mostly in the new areas it's getting to...the older areas are just raised red and a little on the sore side.

I was lamenting to my husband that I'm not sure I can take much more of this...my stomach feels twice the size it did last week, I'm tired, I'm grouchy, I can't breathe as well, and now I'm itchy and raw all over...ugh...

I do have to admit though, if PUPPP is the worse thing that happens, I'll be a grateful woman. It's not harmful to me or Xavier...just annoying...

My friend Bekah had her baby last Wednesday. The poor girl was induced (her blood pressure had been running high the past two weeks or so), then labored for 27.5 hours, and THEN had to have a c-section. Their baby (Raphael) was 7.2 pounds and 19 inches. I'm sooo~ happy for them! (I do have to admit, I hope my labor isn't nearly as eventful though!)

I'm still working on finishing the website for my husband and I's New York trip...I hope for it to be done either later tonight or sometime tomorrow.

Off to eat some ice cream to get my mind off this itch...

Finally home...

So my husband and I got home around 9:30 tonight...

I've finally finished cherry picking through all the photographs, but couldn't figure out how I wanted to post them...go through and edit previous blog posts, make new ones and tag them differently, or who knows what...

I finally decided I would just make a separate website devoted to the trip...I think this will be easiest. I hope to have it up by this time next week...already I know my memory is beginning to fade, as it's really the details that make good scrapbooks, tangible or web-based.

I also have to report that I have broken out in PUPPP hives...it actually started before I left for NY, but didn't want to mention it on my blog...I tried my hardest not to let it get the best of me (and my husband will attest I did a pretty darn good job not complaining about it) but it's gotten considerably worse over the last two days. :( There were a couple times during the night I'd wake up scratching all over my stomach...so I think I'm even itching in my sleep. :/

I have another doctor's appointment this Thursday, so I'll be talking to him about it...

Today is my husband and I's 4 year anniversary...we had a romantic snack car train dinner. :)

Day 2 and (some of) Day 3

Hm...so I think these posts are only going to become more abbreviated...

Yesterday we had dinner at 26 Seats. I've had better French food before, but it was okay, and if you take the price into consideration it was AMAZING.

Since we were in SoHo, we walked around the area and I bought a dress for myself (for my post-maternity days) at a cute little shop.

After trekking around SoHo, we headed back to Times Square (to have a look at it at night) and then intended to stop at a wine bar before calling it a day. Instead, we got side tracked and decided to look at the lobby of the Empire State Building, and then got side tracked again into buying tickets to go to the top.

We were in line for 3 hours...at 10:30pm... The worst part was the fact that you'd stand in line, for say security, and you'd think, "Oh, now we get to go to the top!" Nope. You stand in another line and get sold a map. Then you turn the corner and stand in a line to get on the elevator. Then you stand in a line to get on to a different elevator. We must have stood in at least 10 different lines before getting to the top.

However, the view was breathtaking...I'm not sure if it was worth $40 and 3 hours of my life, and painfully sore feet, but I'm not upset that we did it.

This morning, we went to Mass at St. Patrick's Cathedral - the largest in the United States. We went to the 10:30 am Mass, and Arch Bishop Timothy Dolan did the Mass (and I took Holy Eucharist from him)! He is the most prominent Bishop in the entire United States...coupling this with the EXTREME beauty of the Cathedral made it a very overwhelming experience. We are planning on going back tomorrow to take better pictures, since there were so many Masses and people there, I thought that it'd be easier that way, not to mention their gift shop was closed. Plus, since it's right in the awesome part of Fifth Avenue, I'm hoping to spend some time shopping in Saks as well. :D

We then went to Chinatown, and subsequently Little Italy. We had Vietnamese for lunch, and also a piece of pizza for a snack. The Vietnamese was amazing - such different flavors from your run of the mill Asian food. The Pizza was very good, but nothing TOO special...Then again, how special can standard NY style pizza be?

We're going to roam Manhattan tonight and look for some good food - I think we'll do dinner in Little Italy tomorrow (since we already had Pizza today).

Day 1 and (some of) Day 2

So, Internet Access at our hotel isn't cheap - $4 bucks every 2 hours at a given time...thus, I have to (unfortunately) report considerably less than I had originally intend.

Our train actually left early yesterday morning (around 7:15am instead of 7:20). I can't tell you how much I enjoyed traveling in this way! You have about twice as much space compared to airplane rides, nor the rigmarole of security. There is no worry about traffic, which exit to get off of, or what lane to be in. You arrive at the train station, get on the train, and go. I could get up and move about freely, go grab some food (and/or beer if I wasn't pregnant), and each train car had a restroom (very important right now...). No complaints. This is the way I will travel about the country from now on. It was SO easy and SO comfortable.

I have to admit, I thought that I would find New York City suffocating, and, while it is very large I don't feel swallowed up in it or paranoid.

We checked into our hotel, and our room (especially for the price) was very nice. It is a little on the small side, but it is clean. Besides, since we are on vacation, why do we need a large hotel anyway? We did not come all the way here to live in our hotel! Also, after spending one night, my husband and I can both attest that it is NOT noisy at all - a major advantage considering we are in the middle of the city. We both slept very well. The staff here is very friendly. My only complaint is the lack of free wi-fi, but I'll just consider that to be part of the hotel cost, not to mention perhaps it'll make me less prone to want to laze in the hotel room...

Our first meal out was at Don's BOGAM, a Korean Barbeque, that was just down the street. I had read some amazing reviews prior to and was very exicted to try it!! My husband had already gotten to eat Korean BBQ in Japan (where it is known as Yakiniku) but around where we live, there are no resturaunts that do the traditional style, where you cook your meat at your own table.

Originally, we had a (very nice) waiter who was coming over and placing the meat on, and turning it for us. I asked him if we could do it ourselves, and he deemed that this was fine. (In Korea and Japan you always do it yourself - I'm not sure if in the United States it is a health regulation or they know that Americans are lazy and want things done for them?)

We ordered the Marinated Beef Platter for Two which included marinated short ribs in a spicy sauce, marinated sirloin, and marinated short ribs with mushrooms. It was delicious!! The variety of flavors we were able to try were astounding, considering the multiple side dishes and sauces that came with it.

We walked around a lot yesterday, and in the evening, we stopped by a close by bar called Ayza. I was not very impressed with this place - I had their 21 Layer Crepe Cake, and my husband got a flight of reds. Food and atmosphere was mediocre at best. It was a lot of fun that when we arrived, it was clouding up, during our time there it poured the rain down (we were outside under our table's umbrella), and by the time we were ready to leave, the rain had stopped.

Today, we got our Metro Cards and trekked around the city. We went to Katz's Deli (by recommendation from a friend who used to live here) first, and got amazing sandwhiches. I ordered a corned beef sandwhich on rye, while my husband got the pastrami on rye. Our sandwhiches came with fresh pickles as well. It was quite delicious and I'm sure we paid in calories. (Ordering was also very interesting, as you walked in, were given a ticket, then went to the deli counter and ordered (and you had better order PROMPTLY). You give your order, and they slice off some meat for you to taste while they make your sandwhich. Then, they take your ticket and write down what you ate. After you are finished eating, you walk to the pay counter and they ring you up.)

We stopped by Strand Bookstore, and picked up a few good finds. You can't keep my husband or I away from a good used bookstore.

After eating, we roamed the city some more (which included seeing Macy's and the Toy's R Us), and then stopped at Max Brenner: Chocolate by the Bald Man - a chocolate bar. We ordered the Tasting Fondue and enjoyed it tremendously.

More walking, more subway, and more sightseeing.

So far it's been a wonderful trip full of FABULOUS food. :)

Evening Zero

So, I am naming today Day Zero, because it really wasn't supposed to happen (as I mentioned earlier).

In search of food, we walked downtown (which we are getting to know pretty well now!) and eventually (after much mulling) decided on Ali Baba's, a Middle Eastern Restaurant.

My husband ordered Shiek El-Mahshi (roasted eggplant, stuffed with seasoned ground lamb meat and onions, and topped with tomato sauce, served with a tossed salad) and I had the Ali Baba's Shish Kebab Platter (a compartment dish consisting of hummus, tossed salad, rice with pignola nuts, and topped with a skewer of tender lamb shish kebab). The Tossed Salad was made with fresh lettuce and tomato, and the dressing had lemon juice, oil, garlic, oregano, and salt, topped with fresh feta cheese. We were also served fresh (warm) Pita Bread.

The food was delicious (as I hope our pictures convey), and in particular, the tossed salad's dressing was light but aromatic, with the fresh feta adding a sweet flavor in contrast to the more bright tones of the fresh oregano. My Shish Kebab had a nice salty char on the outside, but remained a very tender and juicy interior.

I look very worried here...I'm not sure why?

On our walk back to our hotel, I stopped by Dave & Andy's Homemade Ice Cream and grabbed a homemade wafflecone stuffed with Cookies and Cream Ice Cream...

My husband decided for a slightly different type of dessert...one that I'm not able to indulge in at the moment...

Nothing too crazy - just a Wild Turkey and Coke.

Tomorrow our train leaves at 7:20 am...I wonder what it'll be like?

No one can ever say "You guys should be more spontaneous."

Last night, at around 11:00pm, we decided we were going to spend the night in Pittsburgh before our exodus from Morgantown to NYC. We decided to stay here and quite honestly, it's not too bad. Your standard room...except, for the fact that all the rooms have private balconies?! We got the "good side" and our view is awesome.


In the distance, is the Cathedral of Learning, which I've mentioned in an earlier post.

Today ended up being pretty busy, upon reflecting about it.

4:00am - Get up to go to the Chapel of Perpetual Adoration.
8:00am - Drop off car at Sears to get our belt replaced.
12:00pm - Drive to Philippi to drop our dog, Princess, at the Kennel.
2:30pm - OBGYN Appointment.
5:30pm - Checked into our Pittsburgh Hotel.

Luckily, after we had so quickly decided last night to leave today (instead of tomorrow), I packed the majority of things last night. I hate packing.

Ah, and one more thing. At my Doctor's appointment today, the nurse who showed me to my room looked around and noticed my husband wasn't with me (he usually comes in), as I had him wait in the waiting room because they were going to do the Strep B test. When she saw his absence, she asked "Oh, did you want to go grab your boyfriend?" I didn't quite know what to say, so I just said, "No, he's going to wait this time."

Upon reflecting about it, it was funny for a number of reasons. First, is that one of the reasons we're even going to NYC is for our 4 year anniversary (July 21st...which is actually the day we'll be leaving New York). Second, is that I think in order to not be assumptive, she said "boyfriend"...I suppose, that were he my boyfriend and she had referred to him being my husband, this would have been assumptive as well...however, since when in society is it better to assume I'm sleeping with a guy out of wedlock, than to be married to them?? Don't get me wrong - I don't want women who are pregnant to feel ashamed or embarrassed that they are not married...but couldn't she say something like "partner" or "significant other" that is more neutral?

On our way to go eat now...mmm...I love food.

Baby Journaling

I am notorious for not keeping up with journals...hence, when I read that it's wise to keep track of your baby's eating and sleeping schedule, I was a little weary.

To try to combat lethargy in this area, we bought an ItzBeen. My husband and I thought it seemed like a nifty no fuss device. However, it still doesn't TRACK all the things it has timers for...so thus, I started looking at the various types of "baby journals" on the market. The most popular seems to be the Eat, Poop, Sleep journal, which after I looked at the sample pages, was a little less than impressed with. Then I came across Skip Hop's Day to Night Baby Log, which I immediately fell in love with. Now, had I not bought the ItzBeen, I probably would have ordered it, however, it's hefty price tag made me cautious...that and the fact that it only logged 6 months (what do you do if you still want to keep logging?). Thus, I made my own copy cat of the Skip Hop journal, only with 2 days per standard size page, making it 4 days if you print front and back. You can take a look at it here.

My investment in a baby journal is now rather nominal - just the time it took me to draft the PDF, and the few dollars it cost to have it printed...

It's about time Verizon...

So, after waiting about 3 weeks to get Internet at the house, it's finally installed and running smoothly. I had to wait from 7am to 5:30pm last night for the technician to arrive at my house today...talk about vague. However, in the meantime I worked a lot on decorating the nursery. It's not done in its entirety, but I'd say it's about 80% there.


Today I went and got my haircut, and after I took pictures, I realized I wore the same halter top back in April when I went to my stylist! I really like it though - it's so comfy and I also don't have to worry about getting hair all over it. It's essentially the same haircut, only shorter and more dramatic. I have to stop waiting three months to go see my stylist though, especially since it's shorter in the back - before I went it was flipping out all over the place!


I'm getting so excited about New York - have any of you been to the Big Apple? Any suggestions (in particular, restaurants)? I know we are definitely going to Don's BOGAM...I'm so excited to finally have Korean Barbecue!!

Why, hello there!

Contrary to the lack of blog updates - I'm not dead. I have been ridiculously busy, and the lack of internet at my house hasn't helped at all. We should have internet again in the next few days...but the way things have been going with Verizon, I'm not holding my breath. I'm just hoping that we'll have a working internet connection for me to start working from home when the time comes.

The last post (which was over a month ago!) I showed off the grouper I bought. I ended up breading it with panko and baking it in the oven, and served it with brown rice. It was delicious!!


I ended up having a total of four baby showers - although the two largest were the ones thrown by my husband's parents, and the one thrown by my parents.


I was so grateful for how loving and generous everyone was! However, I was very surprised as to how just opening gifts and thanking people can really be at this point!

The nursery is still almost finished. I need to get some shelves to put up and then I'll be done (I think).

My husband and I are taking a rather spontaneous trip to New York City next week for five days. While driving back from Greensburg, PA this past Saturday, we were remarking on how we hadn't been on vacation this year. By the time we hit Washington, PA we had decided that we were going to go to New York City. We found a Panera, booted up our laptop, and made Amtrak and Hotel Reservations. We leave next Friday.

I had a doctor's appointment this past Monday, and when I told him about the trip, he was a little surprised. However, he didn't seem concerned about me going, but that I should take a copy of my medical records just incase. After all, he said the worst case senario is me giving birth in New York.

So much more to say, and so many other things to talk about...but I just wanted to push this post pretty quickly just so I didn't let too much time go by...
